Moist, creamy and full of coconut goodness, this Filipino cassava cake is perfect for dessert, merienda or sharing with family and friends! 💛
🛒 What you need
🥥 For the cake:
- 500 g frozen grated cassava, thawed
- 400 ml coconut milk
- 200 ml sweetened condensed milk
- 200 ml evaporated milk
- 2 eggs
- 50 g melted butter, plus extra for greasing
- 1 tsp vanilla
- ¼ tsp salt
- Sugar to taste
🍮 For the topping:
- 100 ml sweetened condensed milk
- 200 ml evaporated milk
- Grated cheese, optional 🧀
👩🍳 How to make it
1️⃣ Prepare the oven and dish
Preheat the oven to 180°C conventional or 160°C fan. Grease the baking dish with butter.
2️⃣ Mix the wet ingredients
Whisk the eggs, condensed milk, evaporated milk, coconut milk, melted butter, vanilla, salt and sugar together.
3️⃣ Add the cassava
Stir in the thawed grated cassava, breaking up any lumps.
4️⃣ Bake the cake
Pour into the dish and bake for 50–65 minutes, until the centre is set rather than liquid.
5️⃣ Add the creamy topping
Whisk the topping’s condensed milk and evaporated milk together, then spread gently over the cake. Add a little grated cheese if you like. 🧀
6️⃣ Bake until golden
Bake for another 15–20 minutes, until the topping is set and golden. For more colour, briefly use the grill while watching closely.
7️⃣ Cool, slice and enjoy!
Cool for at least an hour before slicing so the cake firms up. Serve with your favourite coffee or tea! ☕🍰
💡 Tips
- Thaw the grated cassava before mixing, and break up any lumps for an even mixture.
- The condensed milk already adds sweetness, so adjust the extra sugar to your preference.
- Don’t rush the cooling time. Letting the cake firm up makes it easier to slice!
- Love a sweet-and-savoury combination? Try the optional grated cheese topping. 🧀
💛 A little slice of Filipino comfort, made for sharing!
